Tangy Chicken

This recipe could make a great meal as well as a delicious starter. You can use chicken wings/legs if you want to serve this dish as finger foods/starters. Throw in some jalapenos to spice up your dish. Enjoy.

INGREDIENTS

1 kg chicken breasts

1/4 cup Extra Virgin Olive Oil
-
3 cloves Garlic - smashed and chopped
-
1 Lemon - juiced and strips peeled
-
4 Tblspn Red hot pepper sauce
-
100g FRUGURT Dahi
-
1/2 Tblspn sugar
-
1kg green beans -trimmed
-
1 small-medium red onion

METHOD

First in a small bowl, stir together 3 Tbspn of olive oil, garlic, lemon peel and juice, hot sauce, FRUGURT Dahi, and sugar until the sugar dissolves.

Pour 1/4 cup of the marinade into a large bowl with the chicken and season a little Salt and Pepper also. Toss and coat. Cover and let marinate for 30 mins.

Meanwhile, in a large saucepan of boiling salt water, cook the green beans until crisp-and tender. Then drain.

In same saucepan add the red onion and cook on both sides while it browns, with a little Olive oil.

In another pan place marinated chicken and cook on both sides for about 10 minutes each or till chicken is cooked through.

Add green beans back in with the onions , after onions are sauteed. Add a little more Seasoning.

Place green beans and onions on plate with chicken on top and drizzle the rest of the marinade on top of chicken and green beans.

Serve with pasta or some extra veggies.
